Eggless Apple Cinnamon Muffin



"An apple a day keeps doctor away.."

When it comes to food, what can be better than something which is healthy and yummy at the same time. Today I am going to share the recipe for "Apple Cinnamon muffins". It combines together the health benefits of apple, cinnamon and wheat flour. A wonderful companion for your breakfast/tea time or dessert!!
It is quick make and easy too. Moreover the recipe shared is eggless and consists of whole wheat flour. Kids would love these muffins and through these muffins you can make these fussy eaters eat some apple. It can be given in kids tiffin also. I have used here half all purpose flour (Maida) and half whole wheat flour. You can replace maida by whole wheat flour. In the recipe you can use any cooking oil like sunflower oil which is odourless.
I have garnished these muffins with chopped almonds. Any other nut or fruit can be used for the same.

List Of Ingredients (Makes 6 muffins)



Dry Ingredients
Whole Wheat Flour- 6 tbsp
All Purpose Flour(Maida)-6 tbsp
Baking Soda-1/2 tsp
Baking Powder- 3/4 tsp

Wet Ingredients
Oil-3 tbsp
Brown Sugar-1/4 cup
Milk-1/3 cup
Vinegar- 1tsp
Apple Puree-1/2 cup
Cinnamon Powder- 1 tsp
Vanilla Essence-1 tsp

For Garnishing
Chopped Almonds-4tbsp (or any other nut/fruit)

(For apple puree, take one medium sized apple. Peel it , chop& blend it in a mixer grinder)


Steps To Prepare:


Step1:
Sieve together all the dry ingredients and keep them aside



Step2:
Mix milk and vinegar. Please make sure milk is at room temperature. Wait for 2-4 minutes till milk starts to curdle. Add brown sugar (buy here). Whisk well so that sugar is completely dissolved. Add oil, apple puree, cinnamon powder and vanilla essence. Stir well. Keep it aside.



Step3:
Fold the wet ingredients into the dry ingredients gradually with the help of spatula. Be gentle with the strokes. This should take approximately 1-2 minutes. In case the batter seems thick, you can add 1-2 tbsp of more milk.



Step4:
Set the oven for preheating at 180 degree Celsius. Place the muffin paper cups inside the muffin tray(buy here). Fill these cups to 3/4th level with the batter. Garnish them with chopped almonds. In case you don't have the muffin cups, just grease the muffin tray using refined oil and then drop the batter in the hollows.



Step5:
Place the muffin tray inside the preheated oven at 180 degree Celsius for 15 minutes. Take them out of the oven after 15 minutes and prick them with the toothpick. If toothpick comes out clean that means muffins are cooked otherwise place them back in the oven for another 2-3 minutes.

Apple Cinnamon muffins are ready. Enjoy with hot steaming cup of tea or coffee!! :)



(You may notice different cupcake liners in the steps and the final product. It is because they were made in different batches. Recipe is same :) !!)



Serving Suggestion:
Can be eaten as it is or served with a scoop of vanilla ice-cream as dessert.
