Eggless Chocolate Almond Cookies


Today I am going to share the recipe for Eggless Chocolate Almond cookies. These cookies do not contain any baking powder or baking soda. Initially, I was hesitant to try this recipe as it did not have any baking powder/soda which are considered to be integral part of baking but the result was so good that it has now changed my perception. These healthy cookies recipe is especially good for kids if you do not want to give them biscuits/cookies available in markets containing loads of chemicals, hydrogenated vegetable oil or preservatives. 
These are crisp cookies. Generally here are two types of cookies- soft cookies which have have chewy centre and crisp cookies which are overall crispy in texture. These cookies can be eaten with milk (I love eating them after dipping in milk :D).
I have used finely chopped almonds in these cookies. You can use peanuts, cashews or even walnuts also. 




List Of Ingredients:(Makes 6-7 cookies)


  • All Purpose Flour (Maida)-1/2 cup + 2tbsp
  • Cocoa Powder- 2 tbsp 
  • Unsalted Butter- 1/4 cup
  • Brown Sugar-1/4 cup
  • Vanilla Essence- 1 tsp
  • Salt- A pinch
  • Chopped Almonds- 3 tbsp

Steps To Prepare:


Step1:
Sieve together All purpose flour, salt and cocoa powder (buy here). Add chopped almonds to it. Mix gently.



Step2:
Bring the unsalted butter to room temperature. Do not let it melt. Powder the brown sugar. Whisk it with butter till it is light and fluffy (shown below) using hand mixer or steel whisker (buy here). Add vanilla essence to it and stir well. Please do not over whisk it as the butter would melt and fat would get separated from it spoiling the cookies.



Step3:
Now add the sieved flour to the whisked butter. Rub it gently with your hands to knead soft cookie dough. You can also use spatula for the same. Don't panic in case the dough feels sticky.Just keep going, we only have to bind the ingredients.
Do not knead it as it will lead to gluten formation and spoil the texture.



Step4:
Place the above dough in refrigerator for half hour. In the mean time, place foil paper on the baking tray.

Step5:
Set the oven for preheating in convection mode at 180 degree Celsius. Bring the cookie dough out of the refrigerator and make small balls out of it. Gently press them and keep them on the baking tray.These cookies do not spread much but still I would recommend leaving some gaps in between the cookies. Also, don't make the balls very large.



If the oven has preheated by now, place the baking tray in the oven at 180 degree Celsius for 13 minutes. Keep an eye on the oven after 13 minutes. As I have a small oven these get cooked after 13 minutes but if you have a larger oven it may take another 1-2 minutes. Bring them out of the oven and let them cool.
