Gluten Free Fruit & Nut Cake

Life is too short to say no to a cake!! That stands true even if you are on a gluten free diet. Today I am going to share a Gluten free Fruit & nut cake recipe. It is not only gluten free but all eggless cake recipe.

This rice flour cake recipe was given to me by my nani (maternal grandmother). She used to make  this cake in her younger years. As time passed this recipe got lost somewhere. Recently when I was discussing one recipe with her, she replied "Things have turned complicated now. When I was young, I used to make cake using rice flour and that too on gas using pressure cooker." I got really curious on hearing this as I had never made cake using rice flour. I tried the same recipe in convection oven and got this lovely spongy cake.

These days gluten allergies have become really common. Some don't consume gluten because of allergies and some out of choice but that should not stop one from having cakes. The gluten free cake recipe which I am sharing today turns out to be really soft, spongy and delicious. You don't at all miss the sponginess that you get in cakes made using APF (All purpose flour/Maida) or whole wheat flour. All the ingredients used in this cake recipe are quite simple and readily available at homes.

It is still a challenge in India to get gluten free flours readily in market for baking purpose. So what I am using is "Rice Flour". Rice flour is a common ingredients and you can easily find it in any of the grocery stores near your place. I am using Fruit & nut flavour in the cake as I simple love its combination with rice flour. You can use vanilla essence OR cardamom powder for aroma in cake. Please add one of the things only and not both. If you don't want to add nuts, it is totally fine. Go ahead with vanilla essence and you will get gluten free vanilla cake.

All the people who are allergic to gluten can really consider giving a shot to this recipe. Below I have explained in detail each step along with the supporting image that will help you in proceeding with the recipe.

List of Ingredients:

  • Rice Flour-1 cup
  • Baking Soda-1/2 tsp
  • Baking Powder-1/2 tsp
  • Unsalted Butter- 1/4 cup
  • Powdered Sugar-1/2 cup +2 tbsp
  • Vanilla Essence/Cardamom Powder- 1/2 tsp
  • Milk-1/2 cup + 2tbsp
  • Chopped Fruit & Nuts-1/4cup

Steps to Prepare:

Sieve together rice flour, baking powder and baking soda. These are the dry ingredients of the recipe. Keep them aside.

Bring the butter to room temperature. Whisk it with powdered sugar till it turns light and fluffy. You can use electric beater or manual whisker (buy here) for the same. Add vanilla essence (buy here) or cardamom powder to it.

Set the oven for pre-heating at 180 degrees Celsius. In the mean time, line the baking tin with parchment paper. Apply some oil or butter to on paper and on the inside walls of the tin.

Mix together the sieved dry ingredients to the whisked butter and sugar along with milk. Do not add all the flour and milk together. Take half the flour and milk. Mix well.

Then take the remaining half of flour and milk and mix well to form a thick batter. The mixture should not be very thin or flowing consistency.

Transfer the batter into the lined cake tin. Garnish with chopped fruit and nuts.

If the oven has preheated by now, bake the cake at 180 degrees celsius for 20-25 minutes. Check the centre of the cake using a tooth pick. If the toothpick comes clean, cake is ready else keep the cake in oven for another 5 minutes.

Don't try to demould the hot cake from tin. Let it stay in tin for 10-15 minutes. After that separate the edges of the cake from side walls using knife. 

Invert it on a plate and remove butter paper.

Invert the cake once again and place it on a wire rack for cooling down.

Slice and enjoy this soft and delicious gluten free Fruit & Nut cake!!
