Avocado Pasta Ingredients:
Pasta: Use any dried pasta variety like penne, spaghetti, farfalle or fusilli. Cook the pasta as per the time mentioned on packet instructions as it can vary from brand to brand. If you want to keep the recipe gluten free, please use gluten-free pasta or lentils pasta for added protein.
Avocado: Use ripe avocado for the pasta sauce as unripe or overripe ones will ruin the taste. To check for ripeness press the avocado gently; it should be slightly soft to touch but still firm. For more details, you can refer to guacamole recipe post.
Garlic: I love adding garlic to all my pasta sauces and in this recipe also I have added one garlic clove. Instead of fresh garlic, you can also use garlic powder.
Herbs: Fresh herbs like basil, cilantro or parsley add so much freshness and flavour to the sauce. You can use whatever herbs are available with you or use basil-pesto to make avocado pesto pasta.
Lemon Juice: It adds zesty tangy taste to the sauce while balancing the creaminess of avocados. It also slows down the oxidation of avocados, preventing the dis-coloration of sauce. For best taste, you freshly squeezed lemon juice.
Seasoning: The pasta is seasoned with simple salt and black pepper. If you like to spice it up, feel free to add chilli flakes or some 1-2 tsp finely chopped jalapenos.
Optional Add-ins: To make the pasta more filling and flavoursome, I have added fresh cherry tomatoes. The burst of juiciness compliments the creamy goodness of avocados. I have not tried it yet but I think steamed broccoli would also taste good in this recipe.
While blending the sauce, use water or even better pasta-water as its starch thickens the sauce naturally & makes it cling to the pasta better.

- Prep Time: 5 minutes
- Cook Time: 10 minutes
Ingredients: (For 2)
- Penne Pasta (uncooked)- 2 cups (6 oz. or 170 gms)
- Avocado- 1 large
- Fresh Basil / Cilantro- 1/2 cup
- Garlic Clove- 1
- Lemon Juice- 1 tbsp
- Olive Oil- 1 tsp
- Cherry Tomatoes (halved)- 10 to 12
- Water / Pasta Water- 1/3 to 1/2 cup (as required)
- Black Pepper (crushed)- 1/4 tsp (to taste)
- Salt- 1/2 tsp (to taste)
- Chilli Flakes- 1/4 tsp (optional)
Note: The above recipe yields 2 servings. Double the quantities to make more servings.
Directions:
Step 1:
Add 5 to 6 cups of water along with 1 tsp salt to a deep pot and bring it to boil. Add pasta to it & cook as per the time mentioned on packet instructions (Reserve some pasta water to use later).
Step 2:
Halve the avocado, remove the seed & scoop the pulp using a spoon. Add it to a blending jar with basil, garlic, lemon juice, salt & pepper along with 1/4 cup of water (or pasta water). If you would like to make it spicy, add 1-2 slices of pickled jalapeño.
Step 3:
Blend to get smooth pasta sauce while adding more water gradually to adjust the consistency (I added 2 tbsp more). Scrape the sides in between to get it evenly blended. Taste and adjust seasoning as per your liking.
Step 4:
Strain the pasta and add it back to the pan. Pour sauce over it and toss gently along with chilli flakes & halved cherry tomatoes. For cheesy taste, you can top up the pasta with grated parmesan or nutritional yeast. Serve immediately.
Storage Instruction: Any leftover pasta can easily be stored in fridge in airtight container in fridge for 1-2 days (Please note it slightly changes colour due to oxidation of avocado, so better to make & have it fresh). I would not recommend freezing it as the texture of sauce changes after thawing.
Tips:
- You can add protein by adding some cottage cheese or greek yogurt while blending the pasta sauce.
- If you are not able to find fresh basil, add basil pesto to the sauce. Instead of cherry tomatoes, sun dried tomatoes can also be added.
- To add crunchy texture, add some toasted pinenuts to the pasta.
