Veggie Cheese Parcel is a delicious savoury snack; soft & fluffy from outside with gooey cheese inside. It is perfect dish which you can prepare in breakfast, give your kids in tiffin or even enjoy it with a cup of hot masala tea on a rainy day.
India is a land of diversity not only in terms of people but also for its cuisine. Food plays a central part when it comes to celebrate any occasions or festival. Particularly if we talk about snacks, each region has multifarious list of its own. From Samosas to Pakoras, Vada Paav, Misal Paav, Jalebis, Punungulu, Medu Vada the list is endless.
This snack recipe which I am posting here was shared by my friend. As I am strictly vegetarian and don’t even eat eggs (which many people consider veg these days), she teased me by calling this dish “Eggless” Omelette while serving. For a moment I was perplexed as the word eggless was clearly a green signal but then by definition omelette is something which one prepares using eggs. My expressions somehow conveyed my confusion on which she clarified that somehow she finds the taste of this recipe resembling to omelettes. As I have never eaten omelettes in my life & also eggless omelettes actually don’t make any sense, I renamed it to Veggie Cheese Parcel. I have done slight variation by adding cheese to it (My gluttony for cheese!! :D).
Gram flour or “besan” is one of the most commonly available gluten free flours which is rich in proteins and fibre. It is combined with lots of fresh green veggies and turned into soft cover for bread & cheese slice. The parcel gets it softness from maida and baking powder which is added in the batter itself. Please don’t forget to add black salt in it as it makes a lot of difference. I tried it with only plain salt also but the taste & aroma is not the same as you get by the addition of black salt.

List of Ingredients: (Makes 2 pieces)
- Besan (Gram flour) – 1/2 cup
- Maida (APF) – 2tbsp
- Black salt – 1/2 tsp
- Black pepper – 1/2 tsp
- Salt – To taste
- Water – 3/4 cup
- Baking Powder – 1/2 tsp
- Bread slices – 2
- Cheese slices – 2
- Finely chopped onion – 1/2 cup
- Finely chopped capsicum – 1/4 cup
- Chopped green chillies – 1
- Cooking Oil – 2 tbsp
Steps to Prepare:
Step1:
Take Besan & maida in a mixing bowl. Add black salt, black pepper & salt to it. Prepare a thin flowy batter by adding water to it. Add water gradually while whisking so that no lumps are left. The quantity of water may vary slightly depending on the quality of besan.
P.S:The batter should be of running consistency so that it spreads on its own when we pour it with paddle.
Step2:
Chop off the edges of the bread slice.Keep these bread & cheese slices ready on a plate.
Step3:
Add the baking powder, chopped onion, capsicum and green chillies to the batter prepared in step1. Give it a good stir.
Step4:
In a heavy bottomed pan or non stick tawa, heat 1 teaspoon of oil. Spread it with a tissue so that entire pan is coated evenly.
Now on low flame, take a laddle full of batter and pour it on pan. Lift the pan and tilt it on all sides so that batter is spread properly. Place a bread slice on it and turn it immediately so that it is coated with some batter on both sides.
Place a cheese slice on this bread. Sprinkle some oil near the edges of pancake and let it cook on medium flame.
Step5:
Check the edges of the pancake after1-2 minutes. If you are able to separate edges from the pan, fold it into a parcel. Don’t let the pancake cook completely else it will start breaking in the process of folding.
Step6:
Cook it on pan till it os golden brown on both sides.
Enjoy these delicious Veggie cheese Parcel with ketchup or any dip of your choice!!
