Tender, soft, fluffy air fryer mug cake is a perfect single serve dessert to satiate your sweet cravings. It is eggless, vegan, has no butter, easy and quick to make.

This air fryer chocolate mug cake especially comes to rescue when you are hankering for a cake slice but not in the mood to bake a whole cake. It is simple to make & requires few basic kitchen staples like flour, cocoa and sugar etc.

I rarely use my microwave these days (thanks to air fryer!) and after baking cake, cookies, muffins in air fryer, this mug cake was one of the things left to try in air fryer. It took more time than microwave but the end result was a yummy, moist, heavenly tasting cake.

The air fryer mug cake recipe is:

  • Vegan
  • Vegetarian
  • No butter & No eggs
  • Easy & quick dessert

Mug Cake Ingredients:

Flour: Plain flour or all purpose flour (maida) is used to make this mug cake.

Sweetener: I have used granulated sugar here to sweeten the mug cake. Coconut sugar or brown sugar can also be used.

Cocoa Powder: Use good quality unsweetened cocoa powder for rich chocolatey flavour. If you are using sweetened cocoa then reduce the amount of added sugar.

Milk: Whole milk, skimmed milk or any plant based milk can be used. If you want to make vegan mug cake, I would suggest using plant based milk.

Flavouring: Little bit of vanilla extract (or essence) and pinch of salt enhances the taste of chocolate. If you like coffee flavour, you can add 1/4 tsp instant coffee powder also.

Oil: Use any odourless flavourless cooking oil like sunflower or avocado oil. For richer taste, you can use melted butter.

Toppings: You can sprinkle some chopped walnuts, dark or milk chocolate chips over mug cake before baking for added taste and texture.

Servings Ideas: The mug cake can be enjoyed as it is or topped with scoop of vanilla ice cream or whipped cream for an indulgent dessert.

Can you put a mug in air fryer?

Always check for ‘oven safe‘ or ‘air fryer safe‘ label on the mug which you will be using in air fryer. It is never a surety that the mugs which are ‘microwave safe’ can be used in air fryer so refrain using them until stated specifically on their label.

Here I have used small oven safe ramekin to make mug cake in air fryer. Most oven safe bakeware can be used in air fryer as I have also mentioned in this air fryer banana bread recipe.

How long to bake mug cake in air fryer?

The baking time can vary depending on the size and brand of air fryer. By my personal experience larger air fryer taking slightly longer time to bake. It is better to check the centre of mug cake after 15 minute mark with a skewer or knife and increase the time accordingly.

Is this mug cake vegan?

Yes, the only dairy ingredient in this recipe is milk which can easily be swapped with soy, almond or oat milk. If you are using choco chips, make sure to check the label and use vegan chocolate chips or bar.

Ingredients:

  • All purpose flour- 4 tbsp
  • Cocoa Powder- 1 tbsp
  • Baking powder- 1/4 tsp
  • Baking Soda- A pinch
  • Salt- A pinch
  • Granulated Sugar- (2+1/2)tbsp
  • Milk / Plant based milk- 3 tbsp
  • Oil- 2 tbsp
  • Vanilla Extract- 1/2 tsp
  • Chocolate Chips (optional)- 2 tsp

Directions:

Step 1:
Add flour, cocoa powder, baking powder and salt in a ceramic ramekin bowl or air fryer safe mug. Mix well. (Before moving to next step, set the air fryer for preheating at 170°C (340°F))

Step 2:
Add sugar, milk, oil and vanilla extract and mix to make a smooth lump free batter.
Adding milk oil etc to flour mixture.

The batter should have ribbon consistency as shown below:

Step 3:
Top up with chocolate chips or any chopped nuts of your choice.

Step 4:
Place the ramekin in preheated airfryer and air fry 170°C (340°F) for 15-17 minutes.

Check the center with a skewer or toothpick after 15 minutes. If it comes out clean, the cake is ready else air fry for 2-3 minutes more (The time can vary slightly depending on the size or brand of air fryer).

Carefully lift the ramekin or mug from air fryer basket as it will be hot. Let it rest for 1-2 minutes and enjoy warm with scoop of ice cream or chocolate sauce.

Tips:

  1. Though the cake tastes best when warm, but if there is any leftover you can cover and store it in fridge for 1-2 days. Reheat it in microwave or air fryer.
  2. If you like less sweet desserts, then add only 2 tbsp sugar to the cake.
  3. Instead of oil, you can use melted butter also.
  4. For flavouring, apart from vanilla you can even add 1/4 tsp instant coffee powder.
