Tutti Frutti Cookies are delicious buttery crisp cookies with colourful fruit bits and crunchy cashews. The recipe shared here is eggless, vegetarian, has no baking powder or baking soda and great to serve with tea, coffee or milk.

Eggless tutti frutti cookies recipe karachi bakery style.

These yummy tutti frutti cookies are also called ‘fruit biscuits‘ and are especially popular because of brightly coloured embedded fruit bits. They are a lovely option for high tea snack, holiday baking or can be included in Diwali or Christmas edible gifting box too.

It is such a no-fuss, fun and easy cookie recipe that you can even involve kids in the process. The tutti fruity cookies recipe shared here is-

I got the inspiration to make these cookies from fruit biscuits sold by a popular bakery named ‘Karachi Bakery’ based in Hyderbad (India). I got the chance to try them after shifting to Hyderabad and loved the combination of crunchy biscuits and sweet-tart fruit bits. I have tried to replicate the similar flavour using same ingredients used by them

Tutti frutti Cookies Ingredients:

Tutti Frutti: The term tutti frutti is derived from Italian word ‘tutti i frutti‘ which literally translated to ‘all fruits‘ in english and is basically colourful candied fruit bits. Though they are supposed to be all natural made form real fruits but sometimes their colour or taste is enhanced through the use of artificial colouring or flavourings.

They are used in desserts or baked goods like ice cream, cakes, biscuits or cookies. You can use homemade or store-bought tutti fruity bits in this recipe.

Butter: Use unsalted butter for these cookies as otherwise they can turn out too salty. The butter should be softened and not melted. It is better to leave it on kitchen counter for sometime before you start making cookies. If you want to make these cookies vegan, use dairy free butter or margarine.

Cashews Bits: I like to add some cashew bits in these cookie as they add nutty element to them. If you want to make these cookies nut free, skip adding them.

Flour- All purpose flour or plain flour has been used to make these cookies.

Powdered Sugar- You can use store bought powdered sugar or make it at home by finely grinding granulated sugar.

Karachi biscuits recipe.

Custard Powder- Custard powder is basically gluten free mix of cornstarch (also called cornflour) and vanilla. It gives a nice golden tinge to biscuits and makes the texture of cookies lighter. If you don’t have custard powder you can substitute it with cornstarch.

Ingredients:

  • All Purpose Flour (Maida)- 1/2 cup
  • Custard Powder – 2 tbsp
  • Salt- A pinch
  • Butter (unsalted)- 1/4 cup
  • Powdered Sugar- 1/4 cup
  • Cashew Bits- 2 tbsp
  • Vanilla Essence- 1/2 tsp
  • Fruit Bits / Tutti Frutti- 1/4 cup

Notes:

  1. This recipe yields 10 to 12 cookies. You can double the recipe for making bigger batch.
  2. You can skip adding cashews or add any nuts of your choice.

Directions:

Step 1:

Sieve flour, custard powder and salt together. Keep these dry ingredients aside.

Step 2:

Take unsalted butter in a mixing bowl. Please make sure the butter is at room temperature. Add powdered sugar to it. Whisk it till it is light, fluffy & soft peaks are formed.

Add tutti frutti, cashew bits and vanilla essence to this. Fold them gently.

Step 3:

Add the dry ingredients (from step 1) to the whisked butter. Do not knead the dough, just bring the ingredients together gently using hands or spatula. If the dough feels sticky do not add more flour to it. Instead keep it in refrigerator for 10 minutes and then try again.

Step 4:

Form a small log out of the dough and wrap it with a cling film. Keep this log in refrigerator for 1-2 hours to set completely.

Step 5:

After 2 hours, bring the log out of the refrigerator and cut it into square. Use a sharp knife here for clean cuts. (Set the oven for preheating at 180°C (356°F) before you start this step).

Spread aluminium foil on the baking tray and place these biscuits on it.

Step 6:

Bake these tutti frutti biscuits at 180°C (356°F) for 15 minutes. Bring the tray out, let them cool down for 8-10 minutes on tray itself and then transfer them one by one on a wire rack to cool completely. They will seem to be soft when you first take them out of oven, however they will turn crunchy on cooling.

Tips:

1. In this tutti frutti cookies recipe, vanilla extract has been used for flavouring. For different aroma, you can substitute it with some rose water or 1/4 tsp of cardamom powder.

2. I shaped the cookies dough log into rectangular cube to get square cookies. You can also roll it in cylindrical shape to get round cookies.

3. If you are not able to find tutti frutti bits, you can make this same recipe by using dried cranberries, dried orange peel, dried blueberries and pistachios. Just chop them finely before using.

4. Always cool down the cookies completely on wire rack before storing. If you try to store the cookies when they are still warm, they will turn soft or soggy.

5. You can easily store the cookies in an airtight container on kitchen counter for 5 to 7 days.

6. If you like freshly baked cookies then you make the dough in advance. Shape it in a log, wrap it in cling film and store in fridge. Whenever you want to make cookies, slice and bake as many cookies you want and store the remaining dough back in fridge.

How to know when the cookies are done?

You know the cookies or biscuits are baked or done when you start noticing the golden brown colour on the edges near the base. Below you can see how the cookies have got nice golden colour on bottom. So when you are observing the cookies from outside the oven notice the edges near bottom.

How to know when butter & sugar is creamed?

For making cookies, always use the butter which is kept at room temperature. This way it will be soft naturally and will whisk well with sugar. You know the butter & sugar are creamed enough when the butter turns lighter in colour and the mixture become light and fluffy with soft peaks (as can be seen in pics also)
