Moong Dal Toast Lentil Toast Healthy Breakfast Vegan vegetarian

Moong Dal Toast or Lentil Toast is a delicious, crispy and healthy breakfast or snack recipe prepared with moong dal (small yellow lentil), vegetables and bread. It can be made both on stovetop & air fryer.

As lentils are high source of protein, these dal toasts are more filling & healthy than cheese or buttered toast. A mixture of dal, finely chopped veggies and spices is spread on bread slices which is then toasted till golden & crispy.

These lentil toasts can be made in following two ways and both the methods are explained in this post :

  • On stove top (in pan)
  • In Air Fryer

These crispy moong dal toasts have become favourite breakfast dish at our house. It takes such less time & effort in preparing them that even I don’t mind making them every other day. You can easily give these toasts in kids lunch box too.

Moong dal toast Ingredients:

To make these toasts I have used moong dal or mung dal, also known as small yellow lentil. It is basically de-husked & split whole green gram (sabut mung). The recipe is quite flexible as you can add any veggies of your choice like onion, carrots, capsicum, bell peppers, ginger, cilantro etc.

To season these toasts I have used salt, cumin, garam masala and red chilli powder, turmeric. Instead of red chilli powder you can also use crushed black pepper. The quantity of spices or seasoning can be adjusted as per your taste. You can use any cooking oil, ghee or melted butter for cooking.

Are moong dal toasts vegan?

The dal mixture which we will be spreading on our bread slices is completely vegan & gluten free. So if you are looking for vegan or gluten free breakfast, then this recipe is perfect as long as you are using vegan / gluten free bread.

Lentils are great source of protein in vegan and vegetarian diet. Being a vegetarian myself, I try to include them as much as possible in our everyday diet. This lentil toast or moong dal toast taste absolutely flavoursome & also add the necessary boost of protein in your breakfast or snack .

Washing & Soaking Lentils (Moong Dal):

This step is very important in this recipe as we will not be cooking moong dal for these toasts. Make sure you first wash it well under running water while scrubbing with your fingers to get rid of all dust & impurities. Then soak it for at least 3-4 hours. This soaking softens the lentil and makes it easily grind-able. You can soak it overnight also if you are planning to make it for breakfast next day.

Which types of bread can be used for making Moong Dal Toasts?

You can use white, whole wheat, multigrain or any bread of your choice for making these toasts. You can even take vegan or gluten free bread slices and prepare these lentil toasts with it.

Ingredients :

  • Moong Dal (Small Yellow Lentils)- 3/4 cup
  • Bread Slices – 6 to 8
  • Chopped Onions-1/4 cup
  • Chopped Carrots-1/4 cup
  • Chopped Bell peppers-1/4 cup
  • Chopped Coriander or Cilantro- 2 to 3 tbsp
  • Green Chilli- 1
  • Ginger- 1 inch piece
  • Salt- 3/4 tsp (to taste)
  • Cumin seeds (Jeera)- 1/2 tsp
  • Red Chilli Powder- 1/4 tsp (to taste)
  • Garam Masala- 1/4 tsp
  • Turmeric Powder (Haldi)- 1/2 tsp
  • Sesame seeds (Til)- 2 tsp
  • Oil / Ghee / Butter- For cooking

(If you don’t have fresh ginger, you can use ginger paste. Red chilli powder can be skipped or replaced with crushed black pepper or paprika.)

Directions:

Step 1:

Take moong dal in a bowl and rinse it well with water while scrubbing with fingers to wash off all the dust & impurities. Discard this water and fill with fresh water. Soak moong dal in it for 3-4 hours. If you are planning to make it in breakfast then you can soak dal a night before.

Step 2:

Add this soaked dal in a blender jar along with ginger piece, green chilli and cumin seeds. Add 2-3 tbsp of water & grind till you get smooth, thick paste like consistency. Don’t add too much water as we don’t want the batter to be thin.

Step 3:

Add salt, spices & chopped vegetables to this moong daal mixture. Mix well. If you like spices on higher side, increase the amount of red chilli powder or black pepper.

Step 4:

Spread some of this lentil mixture on a bread slice. Sprinkle some sesame seeds on the toast. Brush oil on non stick pan and keep the side with dal mix facing downwards. Gently press it with spatula & let it cook on medium flame till it becomes crispy.

Step 5:

Brush some oil on plain side of bread. Flip the toast & let the other side cook too till golden brown.

Delicious & healthy moong dal toasts are ready. Enjoy them with ketchup or with coriander mint dip (The air fryer method is explained after this).

Air fryer Moong Dal Toast

If you are making this moong dal toast in air fryer add 2-3 teaspoon of oil / melted butter / ghee in the dal mixture. This prevents the toast from drying while air frying. The recipe will remain same as above only the cooking steps will change.

Moong Dal Toast in Air fryer or Lentil Toast recipe for breakfast snacks

Step 1:

Take bread slices & spread the lentil mixture (prepared in step 3 above) on them. Dab oil or melted butter on top. The oil gives a nice golden colour on top. Sprinkle some sesame seeds and press them gently.

Step 2 :

Preheat the air fryer at 180°C (360°F) for 3-4 minutes. Once it is preheated, place these bread slice in air fryer basket.

Air fry at 180°C (360°F) for 5-7 minutes till they become crispy & golden brown. The time varies from brand to brand, so keep an eye after 5 minutes.

Serve these delicious crispy healthy lentil toasts with ketchup or any dip of your choice.

Tips :

  1. If after blending dal or lentil batter becomes too thin, add some oat flour or chickpea flour (besan) to get its consistency right.
  2. You can try a variation of these lentil toast where the dal mixture is applied on both sides of the toast and then roasted on pan. This way you will consume more lentil in every slice.

    I looks interesting….I am a little concerned that the lentils will not grind well. Can they be cooked a little so they are soft?

      Hi Linda, when the lentils are soaked properly they swell & slightly soften up.Then it becomes easy to grind them. I have made it many times & I always soak the yellow lentils well before grinding. Cooking them before grinding will not give you the same texture & crispiness.

        Can Moong dal flour be used in place of soaked and ground dal?

          Yes, you can use moong dal flour also. Make a thick batter by gradually adding water and then add all the spices, chopped veggies as explained in the recipe above.

      its like when you make falafels, you soak the chickpeas overnight then grind them up to use in the recipe….

    Can you substitute with orange lentils?

    (Do the lentils cook long enough to be consumed? Do undercooked lentils cause gas?)
