Cheese Corn Canapes (in appe pan)

Mini Corn Canapes is a delectable vegetarian starter or snack made with bread, sweet corn, cheese and seasoning. It is an easy, quick recipe that can be made in appe or paniyaram pan (also known as Aebelskiver pan).

Though traditionally ‘appe pan’ is used to make rice or rava appe but this appetiser or finger food recipe is a unique way of using it as we cook crispy bread canapes or cups in it filled with gooey melting cheese and sweet corn kernels. It can be enjoyed with ketchup, chilli sauce or any dip of your choice.

I tasted these delicious corn bites at one of my friend’s place and liked them very much. The recipe is easily customisable as you can also use other toppings like olives, jalapeños, capsicum, bell peppers etc. You can even apply some pizza sauce on the base before sprinkling cheese / toppings and make small bread pizza cups.

Corn Canapes Ingredients:

  • Bread: Use whole wheat, white bread, sandwich bread or multigrain bread as per your liking.
  • Sweet Corn: You can use fresh or frozen corn kernels for the filling. Just wash and boil / steam them for 4-5 minutes before you are using.
  • Cheese: You can use any meltable cheese variety like mozzarella, cheddar cheese, processed cheese, pizza cheese or shredded cheese blend.
  • Seasoning: The cheese corn mixture is seasoned with chilli flakes, crushed black pepper and Italian seasoning. If you are making it for kids, skip using chilli flakes or add other dried herbs (oregano, basil, rosemary) as per your liking.

These days many brands have introduced appe or appam pans in market made of different materials like cast-iron, non stick or ceramic etc. You can use any brand or material of your choice to make these cheesy canapes, however the important part is to season it well before using as otherwise food can stick to it.

Appe or paniayarm stand.

Paniyaram stand has become quite popular amongst people these days because of the variety of recipes you can make in it. Apart from appe, you can make low oil version of many deep fried foods like pakoras, sabudana vada, batata vada etc or desserts like chocolate cake balls.

Here the paniyaram pan I am using has 6 pits or cavities, so at one time 6 pieces will be made but if you have 9 or 12 pits pan you will be able to cook many pieces together at a time.

Ingredients: (Makes 8 Pieces)

  • Bread Slices- 2
  • Grated Cheese- 1/2 cup
  • Sweet Corn Kernels (boiled)- 1/2 cup
  • Salt- 1/2 tsp (to taste)
  • Black Pepper (crushed)- 1/4 tsp (to taste)
  • Red Chilli Flakes- 1/4 tsp
  • Italian seasoning- 1/2 tsp
  • Cooking Oil- 1 tbsp

Directions:

Step 1:
Transfer boiled sweet corns, salt, black pepper, grated cheese, red chilli flakes, Italian seasoning in a bowl and mix well. (Apart from sweet corn, you can also use olives, chopped jalapeños, capsicum or bell peppers.)

Step 2:
Cut 4 circles of from each of the bread slice using cookie cutter or any bottle cap.

Step 3:
Flatten the bread circles gently by rolling them with a rolling-pin. This will make them thin and flexible. (If you want to make pizza cups, you can apply pizza sauce on each bread piece after flattening them)

Step 4:
Keep paniyaram pan on low flame and brush some oil or melted butter in each cavity. Brushing oil or butter ensures bread does not stick to it.

Step 5:
Place the rolled bread circles in each of the hollow and gently press them.

Step 6:
Fill each of the hollow with corn and cheese filling. Let it cook on slow flame for 2-3 minutes. Cover with a lid for 1 minute in between. Covering the pan traps the heat and helps the cheese in melting.

Step 7:
Gently lift the edge of a bread cup with the help of a knife. Check if it has turned golden brown from beneath. If not then place it back let it cook for some more time.

Yummy cheesy bread corn canapés are ready. Serve then with tomato ketchup or any dip of your choice.

    How to make without appe pan? Any alternatives..like oven or anything?

      You can try baking them in muffin pan.
